Do the Tzatziki!

With the steady supply of yogurt and cucumber we’ve had at our fingertips lately, I figured it was the perfect time to experiment with a sauce I fell in love with years ago at a party – a cute Greek couple brought it, go figure.

Tzatziki is a cool yogurt sauce – perfect for any type of dipping {think: veggies, crackers, wraps, etc.} – that refreshes you with cucumber…then surprises you with a kick of garlic.  It’s bliss on a summer day.

Ingredients:

  • 2 cucumbers, peeled, seeded, and grated {we suggest draining off as much moisture as possible, then patting dry with paper towel)
  • 16 ounces of plain yogurt {the thicker the better…this is where our homemade yogurt isn’t ideal, as it’s quite runny}
  • 2 tbs. of olive oil
  • Juice from 1/2 lemon {or a squirt from a bottle}
  • 3-4 cloves of garlic, peeled
  • 1 tbs. of dill {fresh is best}
  • salt and pepper to taste

Whip these babies up in a food processer until well-combined and semi-smooth.  Plop it into a dish, cover and chill for at least an hour.  Then devour.  Promptly breathe heavily on garlic loving friends.  Avoid garlic hating friends.

Do the Tzatziki, hmm hm hm hmmm!
